Shrimps are a type of shellfish and are fast making their way into our local Nigerian cuisine. Shrimp can be eaten cooked and warm or cooked and then chilled, as in a shrimp salad. But before we get to cooking, first the shrimp need to be defrosted. And how you defrost them can impact their final texture. A tip for defrosting shrimps: soak in cool water for 10-20 minutes, wash to break off clumps and you are ready to cook. They are a great pick for small chops, skewers (shrimp suya), if you choose to spice up your fried rice and seafood okra soup, they are never a miss.
